Whatcha Making for Supper?

I've made eggplant parm just a few times. I'm not sure what recipe I used or what I did with it. And someone gave me an eggplant last week :(
I sure wish I had saved that recipe.
I would recommend a basic recipe like this one for you. The one I'm trying is more complicated and incorporates bechamel. I'm just trying it for fun. I usually make a basic eggplant parmesan and it's always great. I usually use marinara instead of tomato sauce and fresh basil, but that sounds good too, so whatever you have.

That sounds pretty close. I remember sprinkling them with salt and rinsing off now.

No idea what I used for the sauce or baking temps/times 🤔
