Eggplant parmesan. Trying a new recipe from one of my online newspapers that has bechamel over the top. Sounds good. We'll see.

I've made eggplant parm just a few times. I'm not sure what recipe I used or what I did with it. And someone gave me an eggplant last week

I would recommend a basic recipe like this one for you. The one I'm trying is more complicated and incorporates bechamel. I'm just trying it for fun. I usually make a basic eggplant parmesan and it's always great. I usually use marinara instead of tomato sauce and fresh basil, but that sounds good too, so whatever you have.

That sounds pretty close. I remember sprinkling them with salt and rinsing off now.

Oh, tonight I'm going to cook what I hope is a meatloaf pattie I took out of the freezer last night. And make some mashed potatoes, green beans, and mushroom gravy.
