when to start eating the eggs

We've eaten the first eggs, time and time again! Yummy first eggs. We actually sold eggs to some guy and when asked if he needed anymore, he said "no, the wife won't eat eggs that come out of some hens butt". I'm not making this up! She thinks the white ones come from the store, not hens!!!!!!!

OK I have to admit I didn't eat the first egg laid by my present flock. I dried it to display it. It was just so long between eggs here.
