when to start eating the eggs

...you are right about us being so far removed from our food...I find it really sad...out of sight out of mind also means that people don't care how the food is treated or handled before it becomes food....I worked at a local zoo a while back as an educator (I have tons of animal experience in all kinds of capacities), and we had the prize winning steer from the stock show staying with us for a while...he was white.

A kid and his mom were walking by, and I over heard the conversation they had. The child says "look mom! A cow!". The mother looks over and says "no, honey. That's a hippo". In all seriousness

Woah! A cow and a hippo? Now that just sounds really extreme, but I suppose it's the reality when it comes to a lot of people. :idunno

I live in the city, so I think having chickens has given us group of neighbours a good appreciation for this sort of stuff. The neighbours have three lil' kids too, and I think it's good they're learning about their food while they're young.

Our next big step is to actually eat one of our chickens. We are getting closer. It is such a big step to take for most of us who have never eaten any meat that did not come wrapped in plastic. It seems so horrible at first. But we have been watching youtube videos and counting all our dang roosters and getting closer and closer to actually doing the deed. I am sure one of these days it will seem totally normal.... just have not taken that step yet.

I think that some people may not think the first few eggs because of the tendency to have meat/blood spots. Some breeds are particularly prone to have meat spots in their first few eggs or after moulting because of the way the yolk separates from the ovary. Obviously the first few times it may not come away cleanly and leave a little spot on the yolk. I know my Ancona had spots on her first few eggs but they didn't do anything detrimental at all. Obviously if it happens for a long period of time or during the middle of her laying season it should be investigated. Apart from that, the first egg is as good as the second or the hundredth, especially when fried and given a light sprinkle of paprika....Yummy

aaaah the old green, blue,&brown egg theory that they must be witch eggs or somn cause theyre not store bought white eggs.i grew up eatin our RIR eggs and they were so much more creamier and richer than store eggs.i remember back seein the first brown egg and i was like i aint eatin no brown egg but, when cooked it was no turnin back.we also had like 12 roosters and they had to be thinned out so we had chicken and froze some and never went hungry.thats the lifestyle and mindset i want to put into my kids.fresh is best,a lil more work but worth it

Yup, that's right you can't the eggs for the first 2 months of laying. So just package them up and send them to me. I have this awesome egg disposal, it is a veritable egg eating machine. You are welcome for the free advice.

When we 1st started getting eggs, we just "collected" them in the fridge. It seemed odd to eat anything that came out of our pets! (I kept thinking, we don't eat anything that somes out of the other pets.) As soon as we had about 2 dozen little eggs, we started eating them and have never even considered store-bought eggs again!
