Luckily Gumbo and Jambalaya have become very specialized and specific. That tells me we have the luxury of choosing our ingredients instead of them choosing us. (Enjoy the prosperity.) The rest is strictly MY opinion so feel free to disagree.

To me Gumbo has to have Okra. Others hate it, even in my household. File can be used in its place as a thickener. DW likes tomato in her gumbo since she is a Creole cook (New Orleans based.) My family settled up the river so less tomatoes.
Jambalaya was brought here by Canary Islanders (Islenos) and Spanish settlers. It is Very similar to Paella but without the saffron. Again, the River Parishes don't use tomato but New Orleans versions do. (In my experience.)
Probably more information than you wanted but here we talk about what were having for dinner at lunch. 🤔
