Keep both. As you are not breeding for purebreds or Apa standards. Keep both and put the Ameraucana mix with your hens and buy some Easter Eggers and put with your other rooster. Since you have a waiting list for eggs this will help you ease up that list and won't have so many people waiting on their eggs.
I wished I had a wating list for eggs. We get $2.00 a dozen for eggs here and people act like that is too high. I think I will I will be going to $3.00 ion the spring though, feed is going higher and higher so I'm gonna have to go up higher.
 
#2 definitely. Cross #1 with any of those hens and you will get some shade of green or olive. Rooster number 2 will give you a much broader palette of colors - sky blue to sea foam to green to olive.

Okay I dont know if this is right but I have heard that the egg color a chicken hatched out of doesnt mean it will produce offspring that lay that color egg. What kind of comb does your first and second roo have? I think that if they have a single comb, they are even less likely to produce offspring that lay colored eggs. I THINK! lol
 
that is correct, i had a hen hatch from a new hampshire rooster crossed with an ameraucana hen and she lays a pale brown egg, although she does have a pea comb. i have heard that the male carries the gene that determines the color of the egg, but i also have a hen whos father is a buff orpington and mother is a ameraucana and she still lays a green egg.
