Just because some men are not gentlemen does not mean that all men are not gentlemen, any more than some women not being ladies does not mean that all women are not ladies. And not all manners are applied courteously. When someone knocks me out of their way on the street and snarls "Sorry" over their shoulder, they may be showing manners, but I sure don't think they are being courteous.
By the way, I know many ladies that do many of the things you listed. I don't see where any of them tie into being a lady or not. My sister could hit a bull's eye better than I could. The carpenter's assistant for a recent job here was female. He did the fine detailed work and she specialized in the heavy work. She never acted other than as a lady around me.
