Who is providing the recipes for todays menu?

We had chicken fettucini alfredo this evening, with
Homemade buttermilk biscuits (without the can! hee heeeee!)
In a big mixing bowl, stir together:
2 C all purpose flour
1 Tbsp baking powder
1/4 tsp baking soda
1/2 tsp salt
3 Tbsp dried buttermilk*

With a pastry cutter, cut in until crumbly:
1/2 C shortening, or you can use lard if you prefer

Make a well in the center, and pour in:
3/4 C milk - I use 2%, but whatever % you want to use

(*If you want to use regular buttermilk, just use 3/4 cup of buttermilk instead of milk, and omit the 3 Tbsp dried buttermilk).

Using a fork, mix the dough until all the dry ingredients are moist. It will be soft, and slightly sticky. Turn it out onto a generously floured surface, and knead a couple of times to smooth it out.

If you like drop-biscuits, just use a spoon and drop them on an ungreased cookie sheet.

I prefer to roll them out, and fold it in half each time I roll it so it makes flakes. Do this several times, then roll the dough out until it's ~ 1/2" thick. Cut rounds with a biscuit cutter and place the dough on an ungreased cookie sheet.

450°F/~ 8 minutes... maybe more, maybe less, depending on how thick they are.

The more shortening you add, the softer they become. But they're oh so good hot with butter and honey.

I think she has gotten used to this idea of coming home to a already done dinner. She was so excited yesterday that she didn't have to do anything after working.

You are a dream! Thank you for stepping up to the plate and doing your share. Male or Female, it is so nice to SHARE the work!

My DH is wonderful. Unfortunately when left to prepare dinner on his own he tends to the premade stuff so I have to plan meals for us and often cook them myself after a full day's work. He is my househusband after having to retire due to disabling back injuries.

I think the secret is to have a range of good recipes set aside and then you can plan and prep dinners more easily.​
 
Tori, I have never measured and have no clue how much I use when making biscuits. I mix it all by sight and feel. I roll them by hand. I have never used a biscuit cutter. I use lard, buttermilk, martha white self rising flour. That's all.
