I had never tried duck eggs prior to suddenly being gifted with two of them a day. The yolks are amazing. The whites don’t (seemingly) get as hard as regular chicken eggs. I Imagine that is why people swear by the moistness that duck eggs add to baked goods.

It’s just that they have a bit of a gamey taste to them. I know what they eat will affect their egg flavors but I don’t think there’s a way to take nature out of an egg.

I like deer meat’s gamey flavor (god love me some deer jerky!) so I think it’s just the mental/mind over matter thing that basically I’m expecting a certain flavor and am presented with something else.

But! All things being fair; I like my eggs over hard so the egg white issue is strictly me. Plus, like the one above me, I’m not a huuuuuge egg person. Sulfur
Anything gives me the blahs due to some experiences.

I hope you like them. But if you don’t, pass them off to someone who does and just keep enjoying your companions.

What part of Hoosier land are you?
NE - Just south of MI and West of Ohio. Almost to the corner of the state :D
How about you?
My husband might think I have gone crazy if my "farm" animals are just pets. :D
I will use the eggs - somehow someway. Lol. I think though, I might go see if I can get some. I know where they sell duck eggs. I don't think I could eat the meat though - not of my own ducks.

We have them for all of the above!
  • They are simply adorable and fun to watch. They are happy animals in the barnyard and our's rarely look for trouble.
  • The eggs are great for baking, ok for eating - prefer them scrambled, and sell very well when you have too many.
  • The meat, when properly cooked, is absolutely wonderful. Properly seared, marinated duck breast rivals a good steak. Duck and dumplings beats chicken and dumplings any day of the week. Homemade duck broth is excellent for a variety of purposes and the rendered fat is superb.
Welcome to byc! :welcome

I’m NE-ish as well (or would it be east central?) I’m in Blackford/Jay county area (closer/quicker to Ohio than to my original Indy).

It’s taken some getting used to regarding weather. I would’ve never thought that north of my old area by a near 1.5-2 hours would mean more snow and inclement weather (our county isn’t listed on the emergency flooding list but it really really should be!)!

As far as hubs goes; my husband accepts that what was planned to be a purposeful batch of ducks has now turned into “love me!” Duckies.

I know where you are. I actually have a friend in that area!

Most excellent!! You’ll be the whole whopping 4th person I know in Indiana who has ducks for companionship: everyone else is flock of ducks strong but for meat/eggs.

I’m currently having an as-of-yet-unidentifiable injury on one of my Pekin ducks and completely confirm that there are no duck vets around and most of them basically believe that any duck issues be resolved with an culling. After all, it’s a cheap $5 pet.’ Grrrrr

See, to me that is weird, the white part thing. I find the egg whites of duck eggs to be more rubbery and a texture that I do not like. particularly when boiled, which is my preferred way of cooking eggs.

I love me some deer jerky too, btw. Actually just braised some deer steak the other day. :)

That's got to be frustrating. :(

I'm an egg eater. I love eggs and I LOVE duck eggs... those huge, orange rich yolks. I love that you can cook them til the whites are slightly crisped around the edge and still have a runny yolk. I love dipping toast in them. I love eating them boiled/steamed, poached, pickled. My breakfast every single morning is a fried duck egg on a homemade sourdough English muffin. I get straight angry without it. I usually give my chicken eggs to my parents and keep the duck eggs for myself, cuz I'm greedy like that.

Also, thumbs up for elk/deer jerky. Elk backstrap aged with fresh pepper and barely seared. Oh, man... I can only imagine how delicious braised deer steak is!
