Why does my rooster do this?

Don't fight him by punching him, that makes him think you're a threat to his hens. Grab him and tuck him under one arm with his wings pressed against his body. Carry him around for awhile, ignoring anything he does, then put him down. Do that every time he comes at you. That way, you're showing that you're stronger than him, but not in an aggressive and seemingly dangerous way.
 
Keep in mind that you wouldn't want to perpetuate a line that is that prone to aggression. This is the reason many people simply send unruly animals to freezer camp, unless their genetics are worth passing on, it is not worth the hassle of having additional animals around.
Exactly! There are plenty of roosters who are not aggressive, and those are the ones who's genes should be passed on. Breeders take a lot of pride in breeding gentle roos of good stock, and I'd much rather have *that* fathering future generations, than what I had in my yard, terrorizing me and the cats and buns.
