Why don't my eggs taste great?

I cook them pretty much the way Arknadius described....

I also make what we call "rocky mountain toast"...You butter a piece of bread on both sides and warm up butter in a pan. Cut a circle of bread out of the middle of the bread and put both pieces in the pan. You drop the egg in the middle of the hole and cook it to taste. We all like them a little different. I like a soft runny yolk, my husband prefers that I break up the yolk when I first drop it in, and we like different toppings. I like a slice of melted cheese, my husband likes Salsa and my son likes syrup.
 
Definitely butter or bacon grease (bacon grease preferred). Don't salt till the end because it causes the eggs to be watery. I've never washed an egg in my life, and have survived thus far, so I guess I wouldn't recommend the addition of any soap, either.

Salt ground black pepper and bacon grease is the bomb. For scrambled eggs fresh herbs cant be beat. Sage rosemary chives.

to the OP: do you have the same trouble with store eggs? Might be worth it to cook one of your eggs and a store bought egg the exact same way and see if you can detect a difference. If so, it could be something your hens are eating (or not eating) as opposed to your cooking method. Also, what kind of pan are you using? If its a teflon pan, make sure its not scratched up, could be affecting the taste, aluminum pans can do the same thing with some flavors. Also check your olive oil,, make sure its not rancid or old. you said you didnt let the pan get very hot, so it might not be over heated olive oil which can alter taste too, but I mention it so you can rule that out.
 
Never used olive oil. Butter is my favorite for pure egg flavor, but I also love bacon fat. I see it as the "free" alternative, since it would have gotten thrown away otherwise. I keep a jar of it in the fridge.
