I'm doing dry incubation since it's very humid in my area.

As you are probably aware not all eggs hatch at 21 days, some can be early or late. There can be many different reasons for this: heredity, humidity, how and how long the eggs were stored before incubation started, and just differences in the eggs. Mine often hatch a day or two early whether in an incubator or under a broody hen. I think that is due to heredity since it is so consistent
One big reason for the eggs being early or late is the average incubating temperature. If the average temperature is low, they can be late, warm they can be early. Before your next incubation I suggest you confirm the temperature in your incubator, the factory setting and measuring devices are not always calibrated. Mine was about 1-1/2 degrees F too high.
