Best tasting rice cake ever!
And of course nothing will be better than anything Annie makes.
I found out that my DH did not get one piece of either the cake or cheesecake. You snooze you lose I guess.
It's been raining steady since about 3, which is nice. We need a good soaker.
So; recipe for the cake. The web site is:

Once you get past all of her babble, the recipe is at the bottom and there is a link to her flour mix. Anyone wanting to make the flour mix, tapioca starch and tapioca flour are the same thing. I did not make the buttercream frosting included with the cake recipe, I made this one:

I did add about 1/4 t salt to the frosting. When you make this recipe, beat the snot out of it for a nice fluffy, easy to spread frosting.
For the Lemon filling I mixed one stick of butter with one cup of powdered sugar. Once combined I added about a cup of lemon curd (make whatever recipe you like or use canned). Beat this mix until it is light and fluffy.
I checked the turkey eggs tonight; the two I thought might hatch are DOA. I will let them sit in the incubator until Wednesday but I am fairly certain they are toast. When I candled the eggs to see if there was any hatching progress, they no longer had that healthy red tint to the light. Oh well.
VERY busy week this week. The oldest graduates and we have a party to prepare for on top of taking care of the camping supplies and cleaning, and food prep. So I am not too sad about the turkey eggs!
