Wisconsin "Cheeseheads"

What cheese recipe are you looking for? It all depends on the innoculant you put into the milk.
 
I would like to make a sharp cheese, I know very little about it, but when I was their I had some and loved it. I guess just how do get it done.
 
Sharp cheddar? Brick? I need you to specify... I work at a cheese company and I know people who are former cheesemakers.
 
Sharp cheddar yes! brick ,wheel, it does not matter to me, the brick will be fine. Thank you for your reply.
 
The sharpness of the cheese depends on how long you age it. At the bigger cheese making facilities they add aging ingredients but for the homemade cheese you are talking about you would have to wait a year or two after making your cheese to eat it. The best aged cheeses are those that have aged 5 years or more. I would look for a smaller cheese factory and order some from them instead of making it yourself.

We have PEEPING!!!!!!! I went out this morning to give mama new water and baby was chirping away. I asked mama if i cold see the baby and she growled at me.

So it should be today! My oldest only has a half day of schoool, so when he comes home, he's going to be so excited! Like me!
