Wisconsin "Cheeseheads"

OK I've had another request for the crust. L and I were just talking about getting a new all inclusive printer, scanner, photo port now it would come in very handy. So here it is it's a Betty Crocker slightly modified. For a 2 crust 9" pie. 2/3C lard, MUST USE LARD not shortening! 2 C flour, 1 teas salt, 1/4 C MOL water, and 1 Tbl oil. Cut the lard into flour and salt until the size of small peas. I use a pastry cutter anyone who makes pies MUST have one! Then work the oil and water into it a little at a time with a fork. I stir it and cut it in using the side of the fork. You don't want it too wet or too dry. Add a little extra water if needed but with these amounts it usually comes out just right. The important thing is to make sure it's all well mixed at all stages. You should be able to ball it up without much effort. You'll know if it's too dry when you roll it out. It should roll out without cracking or splitting apart. If so break it up back in the bowl and add a little more water. If a fruit pie I always sprinkle a little sugar on top just for love. That's it!

Thanks DrH!!!

And Dr Ha Ha, YES! the crust was wonderful. BL4 and her family came over last night for a visit and she brought a mixed berry pie. Yum! And thank you! (We really gotta do that more often.) All the kids were playing so nicely. It was great! Even the "bumpin'" music from the basement!

Hi all,

So we have 4 new additions to our (not so little anymore) flock. We went to the Food and Energy Fair in Chilton and bought 3 EEs and 1 random chick from BuckCreekChickens. We had a guess on the random chick but we aren't 100% positive. She had a variety of pullets from Ideal so we are totally sure what the 4th one is. I plan to keep all my chicks until they start laying and then depending on egg color and personality we will choose to keep our favorites. I am still not positive on how many we are allowed in town but it's not an issue until we decide to put some outdoors. We are still looking for 1 or 2 BCMs and "olive eggers." Also if anyone has any white Bantam Silkies for sale I really want one for my daughter. It seems like all the chicks I want are sold out everywhere. So if anyone knows where I can find some let me know!

I might try taking the older chicks outside today because it is beautiful out there!

For all of you who asked for the yogurt recipe.

1/2 gal milk
1 c plain yogurt (Dannon, Stonyfield, Organic Valley, anything with LIVE active cultures)
thermometer
sugar and Vanilla (if desired)

Use stainless utensils and pots if possible, and sterilize your jars before you start.

Heat the milk on the stove over med heat until it reaches 185*, stirring occasionally.
Cool down to 110-115* (can be accomplished faster in a sink filled with cold water and ice cubes, just make sure to stir every min or so)
In a small bowl, put the 'starter' yogurt and a cup of the cooled milk. Combine well and pour into the rest of the milk.
Reserve a cup of the innoculated milk in a small jar with a lid, this will be your starter the next time you make yogurt.

You can pour your milk into jars at this point for plain yogurt and incubate (instructions below).

To make Vanilla: add 3/4 c sugar (or to your taste) and add appx 2 t vanilla. Stir well and pour into sterile jars with lids.

Incubation:
You need to incubate the yogurt anyplace where it will remain at a temp of 95-115* for an extended period of time (4-8 hours). Temps higher than 130 will kill the bacteria.
I use a small cooler for incubation. My heat source is a few canning jars filled with boiling water. add your yogurt jars to the cooler, shut the lid and walk away.

Longer incubation times will produce thicker and tangier yogurt, but I suggest not going too far past 8 hours of incubation.

After incubation, do NOT shake or mix the jars of yogurt. Place in the fridge carefully and allow to cool. It will finish thickening while it cools.

My kids just add whatever fruit they want to the yogurt or eat it plain.

I sent an altered version of this to Raimnel, but this is pretty much it. When I sterilize my jars I use the water from that pot for my heat source jars.

PM me if you have any questions!

Hi, I was just wondering if any of you have been to the Fall Creek Swap. We went to the Chippewa falls swap this last weekend and found nothing. Probably better that way though, we always end up coming home with way to much.

I love kids especially when they belong to someone else. Oh lord you might be infected with a May Baby their the worst. Just ask my parents. Seriously I hope only the best for your journey!!!!

Well congrats!!!!!!

Morning sickness can last for the first 12 weeks but sometimes it can last the entire pregnancy! You first a boy or a girl? I felt crappy longer with the girls...... the extra hormones is my best guess.......

Good luck getting excused in your classes. If they give you any grief get pissy! (or puke on them
