Your noodles look so much smoother than mine do. I use my grandmas recipe from her head. She bases the eggs on how many people there are but I didnt' know that at the time I was writing down the recipe. I just wrote down exactly what she did and use that recipe. She rests hers over night on the counter then cooks or freezes. Also before cutting she rolls the dough out then rolls it up like a jelly roll and cuts from the ends like you would cinnamon rolls and can get the noodles very very thin.
My family loves home made noodles. I should make some to freeze while the eggs are in high production.
