I've had hens do that. I've had oops eggs and then the hens start laying again. Give her time.

How often do I need to change out the wheat straw on the floor of the coop? I've been doing it once a week. I've heard some say just once a month.

Depends how many birds. Once a week is about right if you have a lot of birds in a small area but once a month is much more practical.
