Once a week is a lot but it will be easier to maintain overall. Worse case if there is a week you just can't get to it, throw a hand of scratch into the coop and let them stir it all up for you.
 
Frequency of bedding change has a lot to do with not just the number of birds and size of coop ... if you do the deep bedding method you don't change it as often, if a lot of rain water gets to the bedding you'll want to change it more often. If you are able to clean out the poo from time to time and turn the bedding it will last longer between changings. I try to go with a deep bedding in our coop. When it is getting close to changing time I rake it out into the pen so that the birds can spread it around and walk on it and such. That helps to clean the floor of the pen. (The hay absorbs a lot the poo and such from the dirt.) After they've had it on the floor of the pen for a while I remove it to the compost pile.
 
My oops eggs have both had yolks. Here's the last one... It was a little bigger than the first.
