It means to butterfly. It's a method where you use kitchen shears and cut along both sides of the backbone to remove it. Then you make a small cut into the sternum; flip the bird over; and, then press down on the breastbone until you hear it pop or crunch. The result is a whole bird that is somewhat flat. The advantage of spatchcocking when smoking a chicken or turkey is that the meat will cook and smoke evenly.

Thank you! Yes we do, it's a great outdoorsy city. We're starting out small, have 4 orpingtons, 2 buffs and 2 lavender, and 2 dominiques. Wanted 4 but what we thought would be roosters is turning out to be hens we think, still not 100% sure. 15 weeks.
 
Earlier this year (for Chinese New Year) I smoked a couple of ducks Beijing style. I had to modify the smoker by drilling a few holes in order to get a rack high enough so that I could hang the ducks to smoke vertically. The preferred smoking source for Peking Duck is chunks of sugar cane. I didn't have that available at the time, so I had to settle for apple wood. I also had to use a couple of modified wire coat hangers to hang the ducks since I didn't have duck hooks. Anyway, the ducks came out great. If anyone wants the recipe, let me know. It is a bit involved, but well worth it. Here's a photo of the finished product still in the smoker:
