Bread prep: I used sourdough starter, well fed, added cheese to dough, which I let rise 3X, sprinkle grated cheese on top, then baked 400º about 20 min :

Calzone mmm so damn good :barniedying of hunger
There was a small Italian take-out restaurant here in our neck of the woods that made the best calzone. they were in business over 25 years and one day it just disappeared. I don't know what happened? It couldn't have been the food.

Maybe the owners retired? That's happened to one of my favorite places before...the owners retired and no one in the family wanted to carry on with the restaurant. Real shame, those family-run places usually have the best stuff!
