2-3 tsp. Garlic - minced
2 cups Fresh Tomatoes - chopped
2-3 tsp. Fresh Basil - fine chopped or 1 tsp dried
1/2 lb. Brie Cheese - room temperature
1/4 cup Pine Nuts - pan roasted to golden brown
2-3 tbsp Olive Oil
3 cups Bow Tie Pasta - cooked, drained
Cook Pasta; drain and set aside. Cut Brie Cheese into rough 1" cubes (rind can be used). In a large skillet on low heat add olive oil, gently warm garlic for 2-3 minutes. Add chopped tomatoes and gently warm (do not overcook); add basil and continue to gently heat through. When heated, turn up temperature to medium add cooked pasta, pine nuts, basil and Brie Cheese. When cheese is melted it is ready to serve. Top with Parmesan cheese.
Note: This is a great and easy dish that uses the summer bounty of your garden nicely. Garlic and basil can be adjusted to taste. A green salad on the side makes for a perfect dinner.
