4 Large Tomatoes
3-4 tbsp Olive Oil
16 slices Smoked Mozzarella Cheese (thinly sliced)
16 Fresh Basil Leaves
Preheat oven to 250°. Slice tomatoes into 4 thick slices each. Arrange tomato slices on cookie sheet, drizzle with olive oil and season with salt and pepper. Roast in oven for about an hour and 45 minutes. Remove from oven and let cool a couple of minutes. On a serving platter, layer a slice of roasted tomato, a slice of mozzarella and a basil leaf. Overlap and repeat with remaining ingredients.
Note: Best served with your favorite non-tomato pasta and crusty bread.
