Here is one of my family's favorites....

Coconut Rice

4 Cups Basmatic Rice (5 Cups if you want it milder)
1 Can of Coconut Milk
1 Can of Water
1 Cup of Sugar


Steam rice or cook. Set aside. In a large pot, mix coconut milk, water and sugar. Bring to a boil over medium heat, stirring often. Once milk mixture has a reached a boil, add the cooked rice and mix thoroughly. Heat over medium heat for 5 - 8 minutes until all milk mixture is absorbed.

Great hot or cold. Makes an excellent side dish, especially with Hawaiian Chicken.

Some of the best rice I have ever had was in a small island off the coast of Belize. Our fishing guide climbed a coconut tree and brought some down. He opened them up and squeezed the juice out until he had enough liquid and cooked the rice in that. It went very well with our fresh caught tuna.

I absolutely despise coconut in anything else but the flavor of this rice was awesome.
 
Sounds delicious. We love Caribbean food and that would so compliment some main dishes I fix. I will have to give it a try. Thanks Cetawin!!
 
Wow, that sounds great, especially with the nuttiness of Basmati rice.

With the sugar, can it be used as a dessert base with chocolate or caramel sauce, do you think?
