What are you canning now?

I'm thinking about canning up a whole bunch more half-pints of jam as take-home gifts for our guests at our wedding. I've alreayd made a whole bunch of strawberry, strawberry-rhubarb, and raspberry. We're getting married in early September, so that will give us time to get blackberries... which are free (yay!!).

Tomorrow I will be canning my first picking of grean beans from our garden. It was soooo nice to finally have some fresh beans! Boy they were good!(cooked some for supper)

Then I have to make some grape jelly,..that stuff goes as fast as I make it. (I can the juice from our concord grapes and make the jelly as we need it). Then this weekend DH will be picking wineberries,.....that will be for jelly too.

Now thats my kind of gift...Homemade goodies are the BEST!
Great idea. I give my homemade goodies as departing gifts after I have BBQs, candle parties etc....I have quite a big turnout to my parties!

Here is you a recipe for some......

Peach jam

10 medium ripe fresh peaches, peeled, pitted, and finely chopped
2 tablespoons fresh lemon juice
1 3/4 ounce powdered fruit pectin
3 1/2 cups sugar
1 teaspoon butter, melted

Turn this recipe into a puzzle! [click]

Directions:

In an 8-quart kettle, combine the peaches and lemon juice.

In a small bowl, combine the pectin and 1/4 cup of the sugar and mix well. Stir into the peach mixture along with the butter.

Over medium-high heat, bring the peach mixture to a full boil, stirring constantly. Stir in the remaining 3 1/4 cups sugar, return the mixture to a full boil, and cook for 1 minute, stirring constantly.

Remove from heat, quickly skim off any foam, and ladle the jam at once into hot, sterilized Ball Mason jars, leaving a 1/4-inch space at the top of each jar. Wipe the jar rims with a clean, damp cloth, fit them with hot lids, and tightly screw on the metal rings.

Process in a bath of boiling water for 5 minutes (water should cover the jars by about 1 inch), cool on a wire rack, and store in a cool, dry place.

Here is a resource for round labels that fit the lids perfectly and add a nice custom touch. www.onlinelabels.com The 2" labels fit small jars and 2 1/2" fit wide mouth. I think your idea is wonderful - I know my family waits with baited breath to see what we come up with for Christmas presents from our canning cabinet.

Thanks for the label link! I think I'm going to do fabric rounds on them and tie them with ribbon or string. I'll do 1/family. We'll probably have 30-40 families at the wedding, which is really doable in terms of canning. I've already got about 25 half-pints done, so doing up another 15-20 is easy.

I haven't done any canning in about a week or so. We're in a bit of a lull for canning stuff right now in my region.

A local fruit/veggie stand is interested in selling some of my jams. What do you think is a fair price to offer them. What price do you think they should sell it for in return? These are 8 oz jars.
