Mine do the same thing. They prefer to dust bathe along the fence, I think they use the fencing as "support" something to push against to get better traction to help loosen up the hard soil. My entire coop and run has an "internal" trench around the inside edges.

Perhaps set up a wildlife cam or two near your coop and see if you can't "catch" a two legged predator?

Isn't dry wall composed mainly of Gypsum? I think I would do some serious research on whether or not Gypsum is a source of calcium and/or other info on chickens consuming Gypsum in potentially large quantities. My GUESS is you will find it is NOT a good source of calcium. I COULD BE WRONG
