**Sort of poll** How do YOU process your birds?

We raise a lot of cornish x so we have a mobile processing unit. We put them in cones and with a VERY sharp knife, cut off the head as fast as we possibly can. We hold them down with one hand for a few seconds so they don't flop out. We have 6 cones in a row so by the time we're done with #6...

Is home-raised chicken meat REALLY that good?

I agree with 'Beekissed'. After butchering we chill our birds for a good couple of hours in ice water before we shrink bag them for freezing. Once we stuff 100 birds in a freezer it takes them a day or so to freeze anyway which is the same thing as letting them rest in the fridge first. It...

Is home-raised chicken meat REALLY that good?

We process all of our Cornish Crosses at 8 weeks. The average dressed weight is 6 pounds. We have had 8 and 9 pounders too. It's almost cruel to wait much longer to process them as some of them (the males) get so big their legs and hearts can't keep up and they'll die. During the last 2 weeks...

Is home-raised chicken meat REALLY that good?

We just had one of our Cornish Crosses last night and my husband and I both agreed that it was by far the BEST chicken we have ever had. It was delicious, both flavor and texture. We grilled it with BBQ sauce. We've been experimenting with other breeds but for meat, the Cornish Cross will never...

    how to dispose of offal?

We compost everything left over from processing. If you layer it with enough carbonaceous matter it wont smell at all and it will make the darkest, richest soil for your garden. We layer ours with old bedding from the brooder and/or sawdust. If you don't have that, go to a lumber yard or...

    freezer bags

I have some advice.... If you order the hog rings and pliers from Cornerstone to seal the shrink bags, make sure you get the spring loaded pliers. They are much better than the others because they hold the hog ring in place. Otherwise it will fly out and annoy you. Again, call and talk to Jim...

    ? Wheezing Cornish X

Thanks Kel. Good idea, I'll see what I can do about some pics of our mobile processing unit.

    freezer bags

Yes. That's how we do it with the shrink bags from Cornerstone. You put the birds on a 'drying rack' to drain excess water and then slip the bag over them. Then we use hog rings to close the bags. Then we dunk them into a turkey fryer full of 200 degree water and it shrinks the bag around the...

    ? Wheezing Cornish X

Oops, I forgot to mention that we also cut the bottom of the jug off...obviously. My husband also suggested that if the birds are too big to fit in the jug, you could find an orange road cone and cut that to fit. You just need someone to hold the jug or the cone unless you can make a stand to...

    ? Wheezing Cornish X

We raise a lot of birds and we have a mobile processing unit but when we have to kill just one because it has a problem and we don't want to have to clean the unit, we do this: We cut the top off of a plastic gallon jug. Then turn it upside down and put the bird in with it's head poking out the...

    ? Wheezing Cornish X

Yep, I would butcher him soon or else he'll just die and that would be a waste. That can happen to cornish crosses around the 7th to 8th week. They gain weigh so fast that their organs just can't keep up.

    freezer bags

Yes, Cornerstone! I highly recommend their shrink bags for freezing. You need to be able to dunk the bird in 200 degree water to shrink the bag around the birds though. We use a cheap turkey fryer from Walmart to heat the water. Jim McLaughlin at Cornerstone is very helpful...

    Cooking ideas??

We've been raising cornish crosses and redbros for the first time this season. We are going to a party tomorrow and we promised to bring chicken. I don't have much experience cooking these birds yet. I'm wondering if any of you have ideas about how to prepare it. I guess I could just bring a...

    Color ranger q

We have raised a couple of batches of Redbros this season. We have been raising them along with cornish crosses giving the Redbros a week's head start. This time we let 50 of them grow longer to see how big they would get. Today we butchered them at 12 weeks and they averaged 5-7 pounds. We...

Raising Cornish X chicks with other types?

Cornish Crosses will have leg problems if not given the proper feed nutrients. I would recommend going to the Fertrell website. We butcher them at 8 weeks and have a dressed weight range of anywhere from 5-7 pounds. We even had a 9 ponder! We're butchering 300 this week.

    How to Butcher a Chicken

My husband and I raise Cornish Crosses and Red Bros and we butcher them ourselves on the farm every month. We use a mobile processing unit which is a 7x12 flat bed trailer with the equipment mounted on it. We use 'killing cones' which are stainless steel cones. We put the birds in upside down...

    Started pullets in PA

Tamaqua may be a little too far to travel. Especially these days. Do you know how much your friend would be charging and how many they have? Does anyone know how I can find more info about this Uniontown fairgrounds thing??
