You know, there's nothing wrong with you cooking (or not cooking) your spinach however you like it as long as it's healthy. It's best in terms of nutrients if cooked lightly, whether you sauté or whatever method you prefer. We all have different ideas of what tastes good.
Contrary to popular opinion, we can often assimilate nutrients from food more readily if the cell walls have been broken down a bit--whether by cooking, puréeing, chopping, wilting with a bit of flavorful hot oil, pickling--a certain amount of processing can be a good thing healthwise. OTOH, it's hard to beat a lovely fresh salad when one is in the mood.
