I think you answered you're own questions? Eventhough the thermometers appeared to be reading correctly, were they calibrated to a standard lab grade thermometer or 'how exactly were they calibrated. Just because they all 'read' the same, doesn't mean they are all accurate....could all be off by the same amount!
From what I can glean from your text, it must have cool spots in the bator! ....otherwise they would be hatching 'on-time' and not be developing slowly.
I guess.. it's been 31 hours since one of them pipped.. should I check to see if it's still tapping, or wait until 36hrs? I haven't been opening the incubator. I clicked the reset button on every thermometer, and calibrated the incubator. I guess them all being off is a possibility.. the cool spots are definitely possible too.

I would definitely try to help it now and check for life.
 
Day 20: I ended up partially assisting it at the 36 hour mark. It was still absorbing yolk. At hour 46 it was clearly trying to hatch, but struggling because of my partial assist.
Got it out, baby is completely healthy ā™„ļø
One of the eggs quit just before hatching.šŸ™
The other is getting into position to pip.😁

It sounds like your temperatures were low. They should have been hatching on day 17.
 
Well technically now is day 14 so I will be taking out the turning tray tomorrow but I candled tonight as I didn’t want to mess with them tomorrow after removing the turner 26/31 going into lockdown 4 clears that were cracked open and not fertile. 1 that cracked really bad and sealing the cracks did not work and it died and the last egg died in shell looks to be early quitter will eggtopsy is tomorrow when I fully remove it (left it in tonight so it wasn’t in the trash all day) wil update you when they start piping zipping and hatching and will post pictures of all that hatch. Hopefully some of the celadons hatch out females as I thought out of 9 we got 3 Roos took care of 2 now at least one is starting to develop the foam and 2/4 possible hens are laying (they are 10 weeks old btw) my silver started molting at 8 weeks old so will have to wait another week or so to find out what gender it is.
 
Late Day 20:Second one just hatched all by itself! Looks pretty blonde, hope it's a pearl. First one definitely isn't. Won't be able to tell for sure until it's dry, though. Have it on my drying incubator.
Its partially dry and def looks like a pearl!
