Mmmmm elkI come from a hunting family and eat primarily elk when it comes to red meat. It never has that gamey taste. They die well and are quickly gutted, skinned, and quartered in the field.
I have had gamey meat. I'm not sure if it's because the animal didn't die right away and released adrenaline into the meat or if the animal wasn't gutted soon enough. Maybe a little bit of both.
I myself do not hunt, but I would like to. I get most of my meat from my uncle and cousin. Both avid hunters.

There's elk like crazy on the west side of my road, but none on the east. I live on the east side of course.
Last summer I made a deal with the guy who does my hay. The usual deal around here is someone cuts and bales your hay and you get 1/3 of the crop, or they buy that 1/3 from you. Laurel raises bison. So instead of him paying me for my third I got half a bison. Problem is, most of the hay he feeds them is a swamp grass. I love bison, but I'm really not enjoying the meat from him. Usually end up covering it up with something (currently I'm on a HP sauce kick).
