➡I accidentally bought Balut eggs: 2 live ducks! Now a Chat Thread!

Son-in-law bagged a huge elk early this fall and gifted us with several roasts.
Cooking the first roast for lunch today.
Sliced 1/2 inch medalians, browned in bacon fat.
Added onion, celery, garlic, bell pepper, salt and pepper, oregano flake and two bay leaves to the drippings and wilted.
Layered the meat in the cast iron dutch oven with veggies and chunks of carrot. Topped with potatoes and mushroom.
Added vegetable broth and cooked for 2.5 hours at 325 degrees. Will pour off the juices to make a lovely gravy.

Edit to add: the meat was not quite as tender enough so I pulled out the pieces with enough broth to pressure cook it for 20 minutes. Then added it back to the veggies.

Good luck to you both! I’m going to be doubling up my physics and organic chemistry in the coming year. :sick I am very much wishing I would have jumped straight into chemistry the first semester but taking anatomy and micro definitely helped me do so well in Bio.
I’ve been meaning to ask, what is your husband going to school for?
Haha, that’s what I’m taking this semester, organic and physics. Only a part time load as we’re still on edge with my health, and I’m going to be applying to vet clinics to start working again.

He’s theoretically going for the same thing as me, a vet degree. He will probably stop after getting his bachelors though and work his way toward getting a business minor to be a future owner/manager of our dream clinic.
He’s already a licensed paramedic and was switching careers when he met me.

Good news! I got my first egg!

Bad news.. all my chickens are sick.. seemingly overnight. They’re all doing the weirdest neck/head shake, some are sneezing, and Whitey is very mucousy and withdrawn. :/
I’ve been sick myself so I haven’t been watching them much the past week. I really didn’t need this right now.
We have some that are sneezing again here too but we’re hoping it’s nothing, and Negan has been shaking his head but I think that’s from him and his son fighting. He had a partly bloody comb this morning because the son got out of his area last night and was chasing the hens this morning.

I’m so sorry your chickens and you aren’t feeling well. :hugs That’s never fun.

House is totally stripped to the bones. Would you believe that there was NO insulation in the walls at all? This is Alberta for crying out loud!
The electrician is coming on Monday, so we'll be wired and ready for the next step. Gas, heating & plumbing. Then inspections . Once they're done we can close everything in! It's looking like everything will be done by the end of January!

The electrician is coming on Monday, so we'll be wired and ready for the next step. Gas, heating & plumbing. Then inspections . Once they're done we can close everything in! It's looking like everything will be done by the end of January!

That is great! It will be here before you know it. Can’t remember when the house was built but I’m not too surprised about the insulation. Glad you took it down to the studs and can do it right!
