Can I just buy a bag or two of egg noodles?Sort of... I boil the carcass with 3 inch pieces of celery, same for carrot and a quartered sweet onion.
While this cooks I make egg noodles (note: for two turkey carcass, I make a double batch of noodles)
Beat 1 egg with 1/3 tsp salt
Add about
2/3 c all-purpose flour
1/8 tsp salt
To make a rather stiff dough. Knead it then permit it to rest covered for 1/2 hour.
Cut dough into one inch wide sections and roll out super thin and let air dry a bit. Dust with flour, stack the strips and cut them 3/4 inch wide. Dust these noodles with a little flour to rest.
Next remove the bones from the broth to cool and I strain the broth and remove the tidbits of turkey from the bones and add the meat back in the broth. Coarse chop the cooked celery, carrot and onion. Season the broth to taste with salt, pepper, garlic...herbs...your choice.
Bring the broth and meat to a simmer.
Add the dusted noodles to the "soup/stew" and cook the noodles about 5 minutes. The flour on the noodles helps thicken the broth.
