BTW, what does an egg look like that's spoiling? Can you tell by candling? Or is it generally just a big, staaainky surprise? All these looked like fresh eggs, except for two that appeared to have the earliest stages of visible development.
Once you have candled a rotten egg and know what to look for, you will know . It ends up looking like a dark soupy mess that can freely roll around as you move the egg. You will almost never see any remaining signs of veins.

That or you will get tired of eating goose. The neighbor had a good goose hunting trip in Canada last year. He ground up a lot of goose meat with pork fat and made goose sausage..

Can you buy pork fat? I've never tried other than the rare tub of lard (which the last time, they hid with the shortening. On a shelf.) The store lady thought it odd that I was looking in the refrigerated section. I suspect they did something ill-advised to it. 😳 I guess maybe from a dedicated butcher shop... I don't think I've ever been to one. 😯

Yes you can buy fresh pork fat. You can ask the butcher at your local grocery store to save it for you. You will most likely have to get it from the local meat processing plant. Too many of the grocery stores get their meat in already packaged instead of in halves.

In my opinion, lard should be kept refrigerated. It can turn rancid too easily if not refrigerated.

When it comes time to process your own beef, you will be getting acquainted with the local meat processor.

BTW, the last episode of Dr. Oakley, Yukon Vet featured a segment where she was preg testing Highland cows.
