All this talk of spinach reminded me that I didn’t upload pic of last night dinner!!! We had an Italian chicken with mr muddy’s butter linguine, garlic bread, and fresh spinach rolled in olive oil, garlic and Parmesan before wilting in the oven!

That looks incredible!! GEEZ!!

I'm with you on that! Trust me it is NOT a quiche. You only use a couple eggs to firm it up.

What about with broccoli or some other veggie besides spinach???? It is otherwise just eggs with Parmesan cheese????

Raw spinach is wonderful. As soon as it gets hit with heat in any form, it is disgusting to me.

@R2elk doesn't need to eat greens in the winter. He grows spring, summer and fall veggies in his green house (that is probably bigger than the house I live in )

I don't put Parmesan cheese on eggs. I don't eat cooked spinach. If I want something cooked in my eggs it will be asparagus, bell peppers, or taters. Bacon too of course.

Broccoli is fine lightly steamed with lots of butter and some salt and pepper.
