Honestly, to get really good layers with better longevity, I would probably just start with commercially produced sexlinks. Keep them for at least two years, and after that breed from whichever ones were still in good health. Each additional year that they stay in good health, hatch more chicks from them. That would get you the genetics for good egg laying, and you would only be breeding from the ones that do maintain good health for multiple years.
For reasonably good layers, use any breeds that are also reasonably good layers. Yes, your Barred Rock rooster and Rhode Island Red hen will probably give chicks that lay about as well as either parent breed. Chicks will look about like Barred Rock hens, but might have some leakage of other colors (red, gold, extra white--any of those are possible.)
