I actually now have two roosters that are 8 months old in the freezer. They'll go for soup/stew, but they are definately not too old to just waste

Oh my, YES, he's much too old for you to eat. But tell you what, go ahead & dress him out anyway, just for the practice, y'know? Then express mail him packed in dry ice to me, and I'll save you any further trouble with him. I will lay him to rest in a covered roasting pan on a bed of chopped onions, carrots, celery & potatoes. He will be remembered fondly, and so will you.

I just recently butchered some 1 and 2 year olds.. The meat didn't seem tougher then usual. I butchered them, but a friend cooked them. She always cooks chicken on high, fast. So it is always a bit chewy. But the chicken seemed the same as some 3-6 month olds I've had.
 
he met his demise this afternoon at the ripe age of 19 wks and 6 days. i will report back tomorrow night after he's roasted at 275 for about 2 hours in the dutch oven.
