I think the dispatching up close and hands on is just tougher than looking down a sight. At least for me that seems to make it more personalOn the butchering part.
I'm getting older and soft hearted I guess. I did butcher some roos last summer. The dressing part didn't bother me. The dispatching part does somewhat.
But when it comes to my Turkey's I seem to find reasons not to butcher. The way it seems the only thing I get to adulthood is toms. So if I want to expand bourbon numbers I will have plenty of toms to butcher (maybe).
Why is it I can hunt deer, pheasant, quail, doves, ducks, geese, and Turkey's without issue. But when it comes to my pen I get kinda mushy.

Breed the Narragansett hens to the Bourbon Buff tom to create Golden Narragansetts.My breeding plans for spring.
Bourbon buff. 1 Tom 3 hens.
Bourbon red. 2 Toms 6 hens.
Royal palm. 1 Tom 2 hens.
My quandary. I have 3 narri hens with no narri Tom.
So should I sell them, butcher them, or cross breed the to toms that only have 2 or 3 hens in a pen so the pure hens don't get overbred.
I still have an open pen and some not pure toms as well I could put them with.
Figure I'll ask you all for opinions to get me off the fence
Yeah, I gave a tom away to a guy buying two goats from me just so my husband didn't have to process him. (besides, the guy's tom got the worst of a hawk fight or something like that-he had 3 hens and no tom left)On the butchering part.

I'd have a rough time dispatching a turkey. How do you not get attached to a turkey?
Guys next door were in their driveway shooting baskets. Annie puffed up and had to verbally express her displeasure. Daisy waddled right into the middle of the game. Guys had to take a turkey break. These aren't kids...they are in their 30s. And they all had to get a selfie with Daisy. She's a flirt. Loves attention... just has to be in the middle of all activities. While Daisy was posing, Annie was sneaking around untieing shoe laces! Gotta love a turkey!
