The turkey was good..... I told my mom with as NY luck next year we will provide the bird. I offered 4 young roosters to roast in place of the turkey but she wouldn't hear of it..... sigh they were good eating roosters too

Well, Roast that beast! Here's a recipe I have modified... I use a 1/4 cup of local honey, 1 TBS salt, 1 tsp white pepper, 1 TBS cinnamon, 1 tsp ginger 1/2 tsp nutmeg 1 tsp chipolte pepper and 1 tsp red pepper flake, and 4 oz cream. Here's the link to the base recipe. You know I always play around with them.
I should also point out that I use equal parts olive oil and bacon fat with a table spoon of butter. I also add a diced apple with the veg. Then when i add the squash, I also add a quarter cup of bourbon.
It sure is hard. I had to have someone do in the first bbb for me.. I had raised them from day old feed store poults... I was able to get four 8wk Heritage poults later so I didn't bond with them... all ended up being jakes..not as bad to process the extra boys...especially the one that decided he didn't like me any more LOL.. I have one hen out of three I got this year hoping to raise some from her this spring... worried about the ones I will incubate and proccessing themI for one refuse to pour my heart and soul into raising a turkey just to eat him or her, yeah sure it's the only way to know exactly what's in your bird and that is why I prefer butchering cattle from my own herd but after the last few years I couldn't just couldn't do it with a turkey.
