I recently purchased an Ameraucana chick. I read the reviews for the breed on this website and they were mixed. Some people said they were sweet and affectionate, while others said they were flighty and disliked human contact. Does temperment simply vary within the breed, or does it have to do with how the chickens were tamed?

Mine act like all my other chickens, I think it just depends on how you interact with them and how much time you spend with them. My chickens are not my pets I have chickens because I like them and I enjoy them but I don't spend hours trying to make them tame, I just let my chickens be chickens

First of all, is this a true Ameraucana or a hatchery type Easter Egger? EEs vary wildly in temperament, being of mixed genetics. My Ameraucanas are very affectionate and friendly hens. My EE hen is sweet, but doesn't care to be picked up and doesn't seek attention like the Ameraucanas.
