Another Attempt at the Pickled Eggs!!!

..can you guys tell me the ratio for the vinegar/water..etc..?..thanks alot, Wendy
 
There reallly is no ratio. If you like really sour pickled eggs like we do. we do more vinegar then water. do a taste test. If you want to get extra flavor out of the garlic and onions. Boil the vinegar and water with the onions, garlic, beets, salt and pepper in a sauce pan.

..if i use the beet juice for color..will they have a beet taste?...i cant take beets..

Well, we tried two eggs yesterday and they were a bit sour on the outsdie and plain on the inside. The vinegar hadn't soaked through to the inside...after 22 days!!! No wonder they can be stored for 5 months in the frig!! I used apple cider vinegar and would not think that would make them sharp, my guess would be that white vinegar would be sharper but maybe not? Anyone else tyr this when I did and get a dif. result? They are not bad, they are are just not great. Maybe another couple of weeks?
 
Well, I tried mine later than you, but I am seeing the same thing you are.....sour on the outside, plain on the inside and I (so far) don't like the flavor. I actually felt a need to apologize to my hens for wasting their eggs. LOL My middle son is complaining "look at how many deviled eggs that would have been MOM".

Oh well, they look kinda interesting sitting in the fridge!!!! LOL
