Thanks for the lesson, as I recall stories about capons- not for me to do...
One thing about the struggling Cornish X, I was so surprised at the damage their nerves can do. It was a great lesson on why use a killing cone, I lost several wings off my nice bodied birds. As they flapped and carried on, I allowed them to hang from the saw horse I was using, due to the young age the wing bones broke post mortum.
I certainly wish I was much closer to CT! Only here in Maine, but it takes me 2 hours to get to the of the I-95 in Me-NH.
