Any Home Bakers Here?

I was once again inspired by this thread! This time to get a clay baker. I used the gift card that work gives me each year to buy

I baked a chicken in it yesterday. The green in the picture is parsley. It was moist and tender. The baker pushed the flavor from the parsley and onions into the meat very well too

I had one a long time ago too! It must have been lost when be moved to Woodland. the posts here reminded me of how good it was so off to Amazon!

(not patient enough to wait until one showed up at the thrift store...)
 
Well, I made my fudge last night, learned a lesson, do NOT use the 4 cup glass measuring cup as a mixing bowl, too hard to get to the bottom and I ended up with lumps in the dark chocolate batch... Next time, I will do the same thing, but use the glass bowl that I used last time and it should work fine since I can dig to the bottom and get all the lumps smoothed out.

I also cheated and microwaved the stick of butter for 1 minute before adding since I didn't have time to let it come to room temp (and the kitchen isn't heated, so room temp isn't much warmer than the fridge right now). That worked nicely, just poured the melted butter over the chips and then added the condensed milk before tossing back in the microwave.
 
My coconut shortbread cookies are finished and so are half of the mocha pinwheels. Still have the gingerbread men dough in the fridge but I have to take Opie (one of my cats) to the vet for an annual check up this afternoon...gingerbread might have to wait until tomorrow.

@rjohns39 I found a new recipe where they use oatmeal cookies and add a filling between 2 of them to end up with something like the Lil Debbie oatmeal pies. If I have time, I'm going to try that recipe (oatmeal pies are so good).
