Your chicken pot pie looks amazing! Any ideas how to make a Vegetarian version or at least please post the recipe so I can trial and error my way through it. I have never attempted pie crusts yet, but white gravy plus ingredients can't be too bad.

Thanks! Sorry, I don't know how to post links, but the recipe is on the Allrecipes.com site, and it's called "Dad's leftover turkey pot pie". I just subbed chicken in place of the turkey. I also added a few cubed potatoes, as well. I do alter the process of actually making the pie, slightly, but follow the basic recipe. We really like this recipe, although it doesn't make a lot of gravy. If you like a lot of gravy, then you'd probably want to add a little more liquid than the recipe calls for. I've never been that great at making pie crust, so I'll leave it for someone else to post a recipe for that. Although I have to say, the crusts I made for these pot pies were pretty good - probably the best I've ever made!

Looks way better than any I've made.

@AllenK RGV depending on what veg you use in your filling, you could approach with either a Béchamel Sauce or velouté Sauce made with vegetable stock

Looks easy enough for substitutions, thank you for the lead! I'l try this with a tofu or seitan, almond milk only thing we don't usually have on hand are the celery seeds.
Apparently I have issues with the cut n paste too I didn't capture the whole thing because I thought the adds were at the bottom of ingredients not expecting them to be in the middle.

2nd edit-also that recipe is only calling for 1tsp pepper, must be a yankee thing, I'll up that to 1TBSP per pie and its missing a little chili powder mix to round out the seasonings.
