Any Home Bakers Here?

Biscuits...I watched Martha Stewart make them. And she just shapes the dough into a square....then cuts them with a knife, into 9 squares. LESS HANDLING ....DOES NOT WORK THE DOUGH. Followed this method (did not cut them with cutter) did not handle
and they were flaky. I did learn something from MARTHA.

Most of her baking ingredients were TOO MUCH SUGAR AND TOO MUCH BUTTER for me. Lately she has been doing less of that.

The chilled butter is what gives things like biscuits and pie crusts their flakiness. By not working the dough too much, the butter doesn't melt from warmth in the hands. It really does make a difference!

Sometimes Martha is right.
Not working the dough too much also keeps gluten from developing in the dough too. You can over beat cakes and make them tough because of developing the gluten in the flour

Anyway, my Japanese friend just made a Japanese dish. I am posting a picture of it.

This is called okonomiyaki.

IMO drop biscuits are sticky, mixed with a fork and dropped by spoonfuls onto baking pan? Georgia gals make "cat head" biscuits - large hand shaped - and awesome ;)

wonder where that came over from, biscuits and gravy drop the biscuits on the gravy
or any other dish in the cast iron skillet

Here is how she said it. I had trouble understanding, so I may edit it later:

Cabbage,

Green onions

1 Egg for 1 patty

Bacon

A little water

Flour (Preferably Okonomiyaki Flour from Japan)

Mix everything except the bacon into patties. Put bacon in a frying pan with oil then put the patty over the bacon. Cook until brown on both sides. Serve with Okonomiyaki sauce.
