It hadn’t occurred to me to do that. :lau I am so blonde sometimes!
Internet search says to use duck eggs the same as chicken eggs in recipes so if the recipe calls for 1 chicken egg use one duck egg.

I would still use the weight though. Both chicken and duck eggs can be much bigger than 56G and that will throw off the rations in the recipe.

Ron, Since you like Wedding Soup....you can take the Minestroni Soup Recipe AND ADD TO IT....take small pieces of ground beef and roll into tiny balls...then you can fry with the first ingreadients...or add them anytime. This becomes the Wedding Soup...you have added tiny meatballs. ENJOY
Ron, I forgot to mention for the Wedding Sooup ....the Greens are
escarole. But to me all Greens are acceptable.

Next time I make minestrone soup I will add ground beef balls to it
