@ronott1 I have only made farm cheese and ricotta at home. Haven't been brave enough to try hard cheese. Is it difficult? Need special equipment?
Basic stuff is stainless steel pot big enough for 2 gallons of milk and a cheese press. I picked up a lower cost one from Amazon.

I used one of my pressure cookers for the pot. Rennet and an enzyme plus salt for the curds to form and cheese cloth to line the press.

You are supposed to have a cheese cave--I use a small wine fridge with a bowl of water for moisture. Cheese wax is used to seal the wheel and it is re usable. I am collecting what I used from this batch and will make another wheel on Saturday or Sunday. It has a lot of steps that take time so I will start earlier this time. There is a progression of pressure in the press and time at each pressure. there is not a lot of active time so I can do other things when waiting between steps
