The nice thing is that the knife is not expensive like some other ones
 
It was good! DH really liked it too. It reminded me of a quick bread (more bread than cake). I used Granny Smith apples and they baked up well. Very moist and just the bit of glaze added to it very nicely.
Granny smith apples are great for baking.

I like pippins but they are hard to find. Martinellis takes up 90% of the market for their apple juice

I'm really not done tweaking the formula since I'm seeking to get them to rise a little more. Although they are not too thick and really delicious. Still on my drawling pad before I enter it in my personal book. Here is the scan of the pad paper. Who posted the Apple and Oatmeal cookie one confusing thing said in the instructions to refrigerate 30 minutes then scoop two table spoon sized pieces of dough onto the prepared baking sheet.... kinda took my off guard what only two tablespoons of dough in
