Any Home Bakers Here?

I just saw a video on how to make cream cheese. Has anyone ever done it? I don’t see a point in it (except that at the moment I have the ingredients to make cream cheese, but no cream cheese), but if you have done it, I have questions!
Please share your experience making it!
 
I don’t think I’ll be making it. I just have questions for those that have.

Which I may as well ask. The person has you removing curds from the pot, and straining them (heat a gallon of whole milk, add vinegar). Then they have to add water to smooth out the cheese as they are beating it. Wouldn’t it taste better if you use some of the milk?
You then add whipped cream.
Can you just add the whipping cream unwhipped?
Can you make cream cheese icing by throwing together a little milk, little vinegar and whipping cream?

Okay. It seems using cheesecloth will keep it moister, eliminating the need to add liquid. The smaller batch makes it seem like maybe I (and a bunch of others now that the power of suggestion is at play!) should try it. The absence of whipping cream makes me think that was only to change the texture as opposed to actually making the cream cheese.
