Any Home Bakers Here?

Thanks so much for the support. I really appreciate it.

He is a master chef, and he has always given me cooking advice. He’s actually the one that got me into cooking. In fact, he gave me a clam chowder recipe, that is really really good. He told me this, “when cooking clam chowder, cook each ingredient separately, that way nothing is over done or under done. You should be able to look at the clam chowder and identify each ingredient.”

His recipe he taught me called for using cream of potato base. Then you cook the celery and potatoes and clam with juice separately, then when they are all done, you add them to the base.

That’s basically all he told me for a basic chowder, but I’m planning on figuring out what seasonings I can put in.

He also has a recipe that he himself invented. He has actually kept how to make it a secret until a year ago. I have the ingredients, but I have no idea how to make it. Only my grandpa and my mother know how.

Anyway, he’s a great chef. Thanks so much for the support. His surgery is in September, and I am going to Oregon to help my grandma during that time. I’m actually going to be cooking a lot, so I might come here for advice on things.

@jnicholes Hope your grandfathers surgery goes well and his recovery is quick. I am sure you will be a big help to them in the meantime.

I just downloaded a recipe for making Ricotta Cheese in an Instant Pot. I am going to try it as soon as I get some fresh whole milk - the small town store near my house gets its milk delivery from the local dairy on Wednesdays, so I figure I will pick it up then. Right now I am still in the middle of making/canning apple sauce.
 
Do you have a recipe for blackberry jam ?
I used the one in the surejell box. I did Three cups of crushed berries--crushed them with a pastry cutter and two cups of juice using a Jelly Juicer like this one.

I used the food mill last time. This one works well too!
 
hmmm probably need to buy one do not have Ma's
It makes is much easier to get the juice! No hanging bags and you get some of the flavor from the skins. It removes the seeds which is why I do part juice and part crushed. The flavor is amazing and you have less seeds for those that do not like as many.
