Dinner our pizza also made dog pill hiders from extra dough.. I add extra every time making pizza dough dogs love it

My parents cabin has a really old propane refrigerator, and it is a real pain in the butt to start up so it only gets used for long stays (more than a weekend). I miss staying at the cabin on weekends like we did growing up. My sister and her family use it almost every weekend though. Actually, it was the original "hunting shack" for the club that owns the land. My sister and her husband have inherited the club membership from my dad, so it is now their cabin.
We enjoy our Cottage (Almost All Summer). We have all comforts. Just our cell phones....
except Washer and Dryer....we are about 2 miles from Hamilton..
a small College (Colgate) town. Dr. Hospital etc. We do go home
....check on the Chickens...and appointments etc. It is a change
and we do enjoy it.
 
Made a no knead Artisan 8 Grain Bread...simple, quick, healthy :

One Large Bowl
2 cups Bread Flour or All Purpose Flour
1 cup Whole Wheat Flour
1 tablespoon honey
1 1/2 tsp salt
1/4 tsp yeast
STIR THESE INGREDIENTS

Add 2/3 cup of 8 Grain Cereal or grains of your choice
STIR
Add 1 tablespoon EVOO
and 14 oz cool tap water
STIR with long handle of spoon...the stir with a spatula around
the bowl to mix ALL flour in. NO KNEAD. Dough into a Ball.
Cover bowl with plastic wrap and let sit on kitchen counter OVERNIGHT.....
In the morning STIR with long handle of spoon and then STIR
with a spatula...into a ball. NO KNEAD.
Drop the ball of dough into Greased Bread Tin.
you can use 4 1/2 x 8 1/2 makes a well rounded top
or a 5 x 9 tin that makes a square top loaf.
425 degree oven 30-35 mins

I made up a new recipe yesterday...Almond Joy Cookie Bars. We haven't tried them yet but I'll let you all know how they turned out later today.

These are seriously good...kind of like a mash up between an Almond Joy candy bar and a chocolate chip cookie. (Sorry about the blurry photo, must be going around. :p)

Here's the recipe if anyone wants to try it:

Cookie Crust
1/2 Cup unsalted butter, softened
3/4 Cup brown sugar, packed
1 tsp. vanilla extract
1 egg
1 Cup AP flour
1 Cup graham cracker crumbs (use chocolate grahams if you want)
1/2 tsp baking powder
1/4 tsp salt
1/2 Cup semi-sweet chocolate chips

Layers
3/4 Cup mini semi-sweet chocolate chips
1 3/4 Cup shredded sweetened coconut
1/2 Cup sliced almonds
about 12 oz. sweetened condensed milk (NOT the whole can)

* Preheat oven to 350*
* Line 8x8" baking pan with parchment and spray with cooking spray
* For the crust: Cream together the butter & brown sugar until smooth & creamy. Add the vanilla and egg, mix until combined. Add the flour, graham cracker crumbs, baking powder and salt, mix until fully combined. Stir in the chocolate chips. Press dough evenly into the bottom of the prepared pan. Bake for 5 minutes.
* For the layers: Remove crust from the oven and sprinkle with chocolate chips (reserve a small amount), then the coconut, then the sliced almonds. Drizzle the sweetened condensed milk over the top and sprinkle with the reserved chocolate chips. Return pan to oven. Bake about 12 minutes, then tent aluminum foil over the pan to keep the coconut & almonds from browning too much. Bake an additional 13-14 minutes.
* Cool at room temperature for 30 minutes, then put in the fridge to cool all the way through.

Makes 9-12 bars (they're pretty rich, so 12 bars is good for us)
