I have had both mule deer and whitetail. Any difference in the flavor can be attributed to the diet and how the animal was killed and handled after killing. Good kills and proper processing will yield meat that does not have any gaminess. If you took a steer, gut shot it and chased it around for half a day before it died and then hauled a long way on a hot day before getting it cooled down and then cut it up the next day or two after leaving it to hang in the sunshine, you would not eat beef either.Nice Deer! I have never cooked Mule Deer, only Whitetail. My sister from Idaho (Caldwell) says that Mule deer are a touch "gamier" than a whitetail, and a neighbor of ours from Wyoming won't eat Mule deer because of the taste, they make dogfood out of it. Of course, he usually has a couple of elk to go in the freezer with his muley, so I don't blame them.
If you want, I can post my Venison Meatloaf and venison Burger recipes when I get home. We do not add any beef tallow to our burger like alot of people do to compensate for the meat being so lean. Deer tallow is horrid tasting and we trim it all off. I am the one who butchers and packages the deer we get. DH skins and quarters, then brings inside to me to trim, cut and package. I am super picky about the meat - very little silverskin is left on the meat when I am finished, lol.
