You can also brine it. We use ice salt white distilled vinegar and cold water for two day, just keep adding ice when it melts. It will pull all the blood and adrenalin out. Make the meat taste yummy. We do it to our gator, pigs and other game.

I like gator! Can't get it up here in WY (that I know of) but it was pretty easy to find in FL.
 
Jared, I tend to follow R2's method and it works. Sooner we get the deer into the root cellar the better. Hope I need to try your method as I'm really curious.
